Recipe #2 is orecchiette with broccoli and anchovies

Recipe #2 is orecchiette with broccoli and anchovies

A classic Southern Italian recipe, full of simple and authentic flavors. Choose between the traditional method or a quicker, yet still delicious, version.

Long method for when you have lots of time:

Ingredients for 2 people:

Procedure:

  1. Bring a large pot of water to a boil (about 1 liter of water for every 100g of pasta).
  2. Meanwhile, chop the broccoli into small pieces.
  3. Add the broccoli to the boiling water and cook for about 10 minutes, or until they’re tender (test with a fork).
  4. In a large pan, heat some extra virgin olive oil and sauté a few garlic cloves along with the anchovies until they melt and infuse the oil.
  5. Use a slotted spoon to remove the broccoli, leaving the water in the pot, and add them to the pan with garlic and anchovies. Stir well to combine the flavors.
  6. Bring the water back to a boil and cook the orecchiette according to the package instructions.
  7. Once the pasta is ready, drain it and add it to the pan with the broccoli and anchovies. Toss everything together over low heat for a few minutes.
  8. Serve the orecchiette hot and enjoy!

Quick and tasty method:

Ingredients for 2 people:

Procedure:

  1. Bring a large pot of water to a boil (about 1 liter of water for every 100g of pasta).
  2. Cook the orecchiette according to the package instructions.
  3. While the pasta is cooking, heat up some store-bought broccoli and anchovy pesto in a pan, with some olive oil.
  4. Once the pasta is done, drain it and add it directly to the pan with the broccoli and anchovy pesto.
  5. Toss everything together and serve hot.

With these two options, you can either go for the traditional method for an authentic experience or opt for the quick version when you're short on time but still craving great flavor!
