The almond varieties that Valdibella uses for productions are Tuono, Genco, Supernova Ferragnes, Romana, Pizzuta and Fascionello, all typical varieties of Sicily. The almond harvest takes place in August and September. After the harvest and after the smallatura, the almonds are dried for 3-4 days in the sun. Once dried, they are stored in bags and stored in cool and dry warehouses. The shell perfectly protects the almond and allows it to be preserved throughout the year and even more.
