Capitate Thyme from Iblei mountains
Thymus capitatus (Thymbra capitata), known in dialect as "Satra," is a typically Mediterranean shrub that has found its natural habitat on the slopes of the Hyblaean Mountains . From spring until July, its flowering, a characteristic of the Hyblaean lands during this period, attracts swarms of bees. Hyblaean thyme honey is, in fact, a prized product, known since ancient times for its properties, now recognized by the Slow Food Presidium. The leaves are particularly aromatic, and simply rubbing them lightly in your hands is enough to smell their sweet, fresh-balsamic scent, intensified by drying.

In the heart of southeastern Sicily, the Iblei Mountains are a natural heritage rich in pristine biodiversity. On the rocky, sunny terrain between the municipalities of Noto and Palazzolo Acreide, the cooperative launched Frutti degli Iblei , a social agriculture operation dedicated primarily to the collection of wild herbs, such as capitate thyme, and the cultivation of aromatic herbs. The thyme and other intensely fragrant herbs are lovingly tended, harvested, processed, dried, and carefully packaged by expert hands, with complete respect for the ecosystem , to capture the full aroma of our Sicily.
