Gomasio is an oriental preparation made from sesame seeds (goma) and salt (shio), widely used in macrobiotic cuisine and Ayurvedic medicine for its therapeutic properties . Used in place of salt, it helps reduce sodium intake in our diets. It is rich in minerals, especially calcium, and proteins, B vitamins, vitamins A, D, E, and PP. Furthermore, it contains essential fatty acids such as omega-3 and omega-6, proving to be a valuable aid for cardiovascular health. In summer, it is an excellent ally against the heat , as it curbs thirst and helps stabilize sodium and potassium levels in the blood.
Ispica Sesame - Slow Food Presidium
Gomasio Dolci Evasioni uses exclusively Ispica Sesame. This area, located in the province of Ragusa, preserves an ancient sesame production, introduced to Sicily during the Arab domination. The Ispica variety was selected two centuries ago by local farmers and has small seeds, an amber color, and an intense flavor. Ispica sesame has always been known, sought after, and appreciated for its high quality . Today, cultivation is limited to a few hectares, cultivated by a few producers who still use entirely manual cultivation techniques on small plots of land. Thanks to these characteristics, Ispica Sesame was recently recognized as a Slow Food Presidium .
The herbs of the Iblei Mountains and the salt of the WWF Nature Reserve of Trapani
Another distinctive feature of our Gomasio are the herbs from the Iblei Mountains, carefully cultivated, harvested, and dried through our social farming project, Frutti degli Iblei. Among the varieties we grow in our fields, we've selected oregano, rosemary, sage, and thyme , which give the condiment a unique aroma, with the unmistakable scent of Sicily.
Finally, Dolci Evasioni Herbal Gomasio is made exclusively with salt from the salt pans within the WWF Nature Reserve of Trapani . This sea salt is precious for many reasons: the salt pans of Trapani and Paceco are among the last remaining productive ones in Sicily; the area boasts an extraordinary natural, landscape, architectural, and ethno-anthropological heritage; and finally, Trapani sea salt, compared to other table salts, contains more potassium and magnesium and less sodium chloride.
Gomasio Sweet Escapes
Our laboratory team inside the Syracuse Prison carefully prepares this precious and unique product due to the extraordinary combination of its ingredients, carefully monitoring all the steps : the grinding of sesame and salt must result in a medium-sized grain, neither too fine nor too coarse; the roasting must keep temperatures and times under control to best preserve the properties of the sesame.
The result is a fragrant condiment, with a strong yet delicate flavour , ideal for flavouring and enhancing all your dishes.
