Lentils have been part of human history for millennia. They are the oldest cooked food with written records, and even today, they remain a valuable pantry staple.
We cultivate lentils in fields that require periodic crop rotation. They are sown between December and January, in the heart of winter, when the soil needs to prepare for the new season. In fact, legumes enrich the soil with nitrogen, a valuable element that will also benefit future crops.
