Typical of western Sicily, this pesto contains the scents of summer. Raw tomatoes, toasted and salted almonds, aromatic herbs such as basil, a pinch of garlic and of course extra virgin olive oil are the fundamental elements for a good Trapani pesto. However, we did it our way, also adding almond cream and a little mint to achieve a rounded and balanced flavour.
