The variety we grow is the Sultano which differs in its slightly smaller seed and thinner skin. We grow chickpeas in rotation with ancient grains. In this way we are able to regenerate and enrich the soil with nitrogen without other external contributions. The same resources also apply to nutrition: their contribution of proteins and fibers make them a food rich in nutrients as well as flavour.
