Among the most famous specialties of Apulian cuisine, they are hand-picked by selecting the most tender parts, seasoned with oil, chilli pepper, garlic, vinegar, salt and lemon juice, and bottled in extra virgin olive oil, without the use of preservatives.

• Salt
• Herbs in varying proportions: dried garlic, dried oregano, dried basil, hot chili pepper powder, dried rosemary
• Acidity regulator: citric acid
