These lentils come from a hulling process of a common green lentil. During cooking they tend quickly to form a puree, thus reducing cooking times.
We grow lentils in rotation with ancient grains. In this way we are able to regenerate and enrich the soil with nitrogen without other external contributions. They are sown between December and January, in the middle of winter, when the land needs to prepare for the new season.
