These lentils come from a dehulling process of common brown lentils. During cooking, they quickly form a puree, reducing the cooking time.
We cultivate lentils in rotation with ancient grains. This allows us to regenerate and enrich the soil with nitrogen without external inputs. They are sown between December and January, in the heart of winter, when the land needs to prepare for the new season.
